Hiyu Falcon Box White Wine 2017

"The Falcon Box is made from a one acre parcel just North of the white barn at Hiyu. It is planted to a field blend of white and red grapes of Burgundian origin. It could be made as either white, red or rosé, but we chose to make it as a traditional white wine in 2016. All the fruit is picked together and basket pressed directly into Stockinger Demi Muid's for fermentation and aging. It's an alpine wine with the power and swelling richness of Chardonnay, the breed and precision of Aligoté and Pinot Blanc, the exotic red essences of Pinot Noir, Meunier and Pinot Gris and the salinity of Melon de Bourgogne. Its a chameleon and at moments can remind one of Belluard's Gringet based wines from the Savoie, Huet’s Chenin or the incredibly focused Meursault of Arnaud Ente.
