Robert Sinskey’s Abraxas is our wine of the month and hopefully the wine of choice for your holiday celebration. It is a still white wine from the Napa region of California. The wine is made from multiple grape varieties – Riesling, Pinot Gris, Pinot Blanc, and Gewürztraminer which are all 100% organic and biodynamically grown.
Rob Sinskey believes that “the goals of making luxuriously elegant wines and farming with earth-friendly methods are not mutually exclusive. have adopted methods that not only produce wines of individuality but leave a minimal footprint on the land”. His vineyards also provide a great culinary experience and they are the experts on food and wine pairings.
This vintage of Abraxas is one of the more generous in recent memory. Chamomile, buttercup, honeysuckle, and soft herbs lead to a floral bouquet that evolves into a rush of fruit like kumquat, lime, green apple, and honeydew melon. The first sip bursts with juicy flavors of tropical fruit like passionfruit and white pineapple, fresh summer peach, green apple, and a twist of Meyer lemon. Orange blossom, lemon balm, and a soft honey’d note chase a line of minerality that drives long length and carries the wine’s complexity. These high acids greatly complement roasted meats.
